I've been running mlton on snow leopard for several months (both 32 and 64 bit).
I believe that Matthew added all of the required changes to the repository.
I used the macports version of gmp, but I had to install it with the +universal
attribute.

BTW, file /opt/local/libgmp.dylib reports on my machine:

/opt/local/lib/libgmp.dylib:         Mach-O universal binary with 2 architectures
/opt/local/lib/libgmp.dylib (for architecture i386):	Mach-O dynamically linked shared library i386
/opt/local/lib/libgmp.dylib (for architecture x86_64):	Mach-O 64-bit dynamically linked shared library x86_64
